No Such Thing as Too Much Avengers

Went hiking yesterday at Douglass Springs with my family for Mother’s Day and got a really good workout from it. We also tried a new buffet restaurant that recently opened in town called U-Like Buffet. It wasn’t bad given that it was $8 per person.

This weekend overall was pretty eventful. After work on Friday, I went to watch the Avengers the 2nd time with Chris and his friend since Chris hadn’t seen it. Then on Saturday after Emily’s graduation party, I went to see it yet again for the 3rd time with Eamon, Sonya, Chris, Emily and Adam. The movie is that awesome.

Plus, I’ll admit it, I couldn’t turn down the opportunity to see these guys again.

Last Sunday was my 6th year anniversary with Darren. Unfortunately, we couldn’t really celebrate too much given that Darren had a final exam to study for the following week. So what I did was surprise him with a steak dinner and dessert.

I’m honestly pretty proud of how I made the steak and the pasta salad. The steak was pretty simple as I just marinade it with teriyaki sauce and grilled it. The pasta salad was more of an experiment and it came out really delicious. I cooked some shrimp and the rotini pasta and seasoned it with garlic powder, and even added a little butter. Then I just topped it on some baby spinach and tomatoes and squeezed a little lime juice over it. It tasted better than I expected. I was a happy panda.

Then for dessert, I decided to try to make chocolate mousse for the first time.

I’m pretty proud at how this came out as well. I should’ve made this a little earlier during the day so that it sets in the fridge a little longer, but even though it was a little more like pudding, it still tasted delicious. I just love cooking and baking!

On Wednesday evening, I went and saw The Avengers with Darren and Alvis and then saw it again last night with Chris and his friend, Dan. The movie was kickass! Hence why I didn’t mind seeing it twice. :P I honestly would have to say this is the best superhero film by far. Well done, Joss Whedon.

Successful Faux-Mexican Holiday

I threw a sort of last minute Cinco de Mayo party last night and it turned out better than I expected! My intention was to gather only a few people over and just cook a few Mexican dishes. Nikki helped me out a lot by making her tacos, which was the main dish of the night. I made quesadillas, Spanish rice, and churros for dessert. The Spanish rice was hardly eaten, but the quesadillas and the churros were gone in minutes. I was glad the party went very well and of course, I was really happy to see my friends again in awhile.

Since today is May 6th, it is Darren and I’s 6 year anniversary. Now of course I want to do something special today, but given that Darren has a final exam to study for, we can’t really do a whole lot. :/ But i was thinking of cooking up some steak and perhaps make some chocolate mousse. I’ve been wanting to learn how to make that for awhile now.

The list of things my roommates asked me to get. This will be rather difficult.
